Cooking: Roasted Asparagus

I love asparagus, especially at Easter. However, during the summer I am always looking for a flavorable vegetable. This is an easy recipe that brings out the best of the asparagus.

Take 1 lb. of Asparagus. Cut the ends and trim the ends with a vegetable peeler.

Place on cookie sheet and top with olive oil, salt and pepper.

Roast for 25 minutes at 400 degrees.

An elegant, yummy and most especially easy side dish.

  1. Hi Cynthia! I haven't done this in a long time. Thanks for the reminder. Any veggie when it's roasted takes on such a wonderful flavor. Mmmm. Good for us too.
