Cooking: Menu Week Ending January 23rd

Oh my goodness, we are going through some major wedding drama, the county school system has taken over our venue and we are currently trying to find a venue with a wedding 5 months away. I am going to write a nice long post about this tomorrow but need to get back on track with a menu, my goals and resolutions.

In addition to working on the goals, etc. I am painting, teaching, cleaning and testing recipes. 

Here is my attempt to get back on track.

Monte Cristo Sandwiches

Ingredients

  • 2 slices bread
  • 1 teaspoon mayonnaise
  • 1 teaspoon prepared mustard
  • 2 slices cooked ham
  • 2 slices cooked turkey meat
  • 1 slice Swiss cheese
  • 1 egg
  • 1/2 cup milk

Directions

  1. Spread bread with mayonnaise and mustard. Alternate ham, Swiss and turkey slices on bread.
  2. Beat egg and milk in a small bowl. Coat the sandwich with the egg and milk mixture. Heat a greased skillet over medium heat, brown the sandwich on both sides. Serve hot.

Cheeseburger Sliders
Sweet Potato Fries
 
Cheeseburger sliders (Adapted from Ina Garten)
  • 2 pounds of ground beef
  • 1 T. dijon mustard
  • 3 T. olive oil, plus 
  • 3 t. garlic
  • 1 t. kosher salt
  • 1 t. black pepper
  • 6 oz White American Cheese
  • 12 small slider buns
  • Lettuce
  • Tomato
Mix gently with a fork to combine, taking care not to compress the ingredients. Shape the meat into 12 (2-inch) patties of equal size and thickness.  Place the sliders on the grill  or broil in the oven for 4 minutes. Turn the sliders over with a spatula and cook for another 4 to 6 minutes, until medium-rare, or cook longer if you prefer the sliders more well done.

For the last 2 minutes of cooking time, place 1/2-ounce American Cheese on the top of each burger. Remove the sliders to a platter and cover with foil.Slice the buns in half crosswise and toast the halves cut side down on the grill.Top with lettuce and tomato
