Herb Butters



One way to preserve the fresh herb flavors of summer throughout the year is to use the herbs to make different herb butter. These butters add some wonderful flavor to eggs, meat, fish, cheese and pasta. Spread some herb butter on Artesian bread and you will be quickly transported back to the hot days of summer...



Herb butters are easy to make. Soften the butter until room temperature. 


Mince the herbs or garlic and combine thoroughly in a mixture. 



Next place the butter on wax paper. Create a log, twist the ends. Refrigerate for two hours to let the butter set and make your log prettier.


I put the butters in ziploc bags and freeze. How easy was that...
  


Garlic Chive butter. .. use with fish, eggs and breads
·         1 c. butter
·         2 cloves of garlic
·         1 T. Chives

 

Herb butter. .. use with fish, meat, vegetables, cheese and eggs
·         1 c. butter
·         1 and 1/2  t. Parsley
·         3/4 t/ Tarragon
·         1/2 t. Rosemary
·         1/2 t. Chives


Dill butter. .. use with fish, eggs and breads
·         1 c. butter
·         3 T.Dill
·         3 T. Parsley

This week, I am making Sage butter for the skin of our Thanksgiving Turkey. If you need some sage, let me know. I have plenty.



Sage butter. .. use with turkey and stuffing
·         1 c. butter
·         1 T. Sage
·         salt and pepper
