I tried to come up with a dessert for the family dinner that I could make ahead of time and would be both delicious and a little refreshing.
These cookies are so good on their own but I decided to make them “moon pie” like with a raspberry cream cheese filling.
Chocolate Sugar Cookies
3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup unsalted butter, softened
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup unsweetened cocoa
Preheat oven at 350 degrees. Combine flour, salt and baking powder in bowl and set aside. Cream butter and sugar for several minutes. Add eggs, one at a time. Then add vanilla and cocoa. Gradually add flour mixture, and mix until just smooth. Wrap in plastic and chill for at least one hour.
Roll out cookie dough on floured counter. Cut into desired shapes, brushing extra deposits of flour off the top.
Bake on a parchment-lined baking sheet for 8 to 11 minutes. Transfer to a wire rack to cool.
Raspberry Cream Cheese Filling
2 tbsp raspberry jam
8 oz of cream cheese
1 cups confectioners’ sugar, sifted
Pinch of salt
Colored sanding sugar or sprinkles for decoration
To make the Raspberry Cream Cheese Filling
Using an offset spatula, put the cream filling between two cookies. Give a little squeeze.
